Baymax German Cookie

Sorry, another long absence again, I don't really know what happened, for some reason, I just ended up doing other stuff. I guess I just got used to not blogging, lol. I doubt I will be updating my blog as much anymore from now on, but I will still try to update recipes now and then.

For today, I'll be sharing the recipe for these Baymax cookies. I know I promised to update about watermelon bread piggies before this and some of you are asking me where that recipe is. Sorry, I was actually drafting up that post a couple of weeks back, but I misplaced some of the measurements I took down for that recipe, so I will have to make that again before I can share.

These Baymax cookies were made with my usual german cookies recipe. These cookies have a crumbly texture that just melts in your mouth. This recipe only requires a few ingredients, is very easy to make, and it's very versatile, as you can mould the dough into almost any characters you fancy.

I used one to decorate my boy's ice-cream, just for fun, lol.

I used charcoal powder to colour the dough black, but if you can't get hold of it, please replace with either dark cocoa powder or black food colouring.

BAYMAX GERMAN COOKIE RECIPE

Ingredients:
125g butter
50g icing sugar, sifted
125g potato starch
80g cake flour
1/2 tsp charcoal powder

Method:
  1. Beat butter and icing sugar till light and fluffy.

  3. Sift in potato starch and flour, mix till a soft dough is formed.

  5. Scoop out around 3 tbsp of the dough and mix with charcoal powder. Mix till it turns black. Wrap both the black dough and the white dough separately with cling wrap and refrigerate for half an hour.

  7. Take out the white dough, mould into 2 balls, 1 for the head and 1 for the body(mould the body slightly bigger than the head) and join them together. I measured the dough for this so that it's more consistent, but you can choose not to do so if you prefer. For your reference, I measured 8g for the body and 6g for the head.

  9. Mould out Baymax's arms and legs and join them to the body. I did not weigh the dough for the limbs.

  11. Take the black dough and roll into two small circles for Baymax's eyes. Roll out a thin  strip for Baymax's mouth. Alternatively, you can also add water a few drops at a time to the black dough, till you get a thick paste, that you can fill in a pipping bag and pipe on the details.

  13. Add on heart shaped sprinklers.

  15. Bake cookies at 130 degrees celcius for around 25 minutes. To prevent cracking, please place at the middle to low rack and insert an empty tray above it.

Totoro Black Sesame German Cookie

One week of school holiday just flew by, have not accomplished anything much the past week, other than lazing around. I'm addicted to a new Korean drama after a long hiatus from watching any dramas, can't wait for it to be over, so my life can go back to normal, lol. (sounds ridiculous but it's true.) It's going to be busy the coming school term onwards, all the way till early October for IT, where he will be taking his first major examination. I hope he can take the stress and perform up to expectation, both from us and the school.

For today, I'm sharing these Totoro melt in your mouth cookies. This long overdue recipe is from last year. I made a few variation of german cookies and this one was one of them.

Totoro was coloured grey using black sesame and Susuwatarti (black soot) was coloured black using charcoal powder.

If you like black sesame, you will like this cookie. However, if you don't, I suggest you colour the dough grey using charcoal powder or black colouring instead, so you won't get the taste of black sesame. IT likes the cookies but LT prefers the plain version, without black sesame.

If you can't get hold of charcoal powder, you can replace with dark cocoa powder or black colouring.

TOTORO GERMAN COOKIE RECIPE

Ingredients:
125g butter
50g icing sugar, sifted
125g potato starch
80g cake flour
1 tbsp toasted grounded black sesame
1 tsp charcoal powder

Method:
  1. Beat butter and icing sugar till light and fluffy.

  3. Sift in potato starch and flour, mix till a soft dough is formed.

  5. Divide dough into 3 portions, around 300g, 50g and 20g. Colour 300g of it using black sesame. Colour 20g of it using charcoal powder. Leave the 50g plain. Wrap the dough separately with cling wrap and refrigerate for half an hour.

  7. Take the grey dough, mould into balls and flatten them a little.

  9. Take the grey dough dough and roll into two small balls, flatten them a little into ovals and place on the top of the cookie.

  11. Use white dough to mould out Totoro's eyes and tummy.

  13. Add water to the black dough a little at a time till you get a paste that you can use to draw. Fill in a pipping bag and pipe out Totoro's eyes.

  15. Pipe out the inverted "V" on Totoro's tummies.

  17. Bake cookies at 140 degrees celcius for around 20 minutes. To prevent cracking, please place at the middle to low rack and insert an empty tray above it.

Totoro Soba & Puff Pastry Soup

This is the second time I'm making Totoro Soba. My first one was made in 2013, inspired by the Totoro soba that went viral online. After that, I went on to use noodles to make many different food art. This time, I'm remaking Totoro again using my homemade black sesame noodles.

My black sesame noodles recipe probably need a little tweaking, added a little too much black sesame and the noodles broke quite easily. Susuwatari, the black soot on Totoro's head was made from charcoal noodles, a little goes a long way when using charcoal, very little is needed to colour the noodles black.

Other ingredients used to make this were grated daikon and nori. Noodles were served cold with a soy sauce based dipping sauce, very refreshing for the hot weather.

The cookies at the side are made from black sesame and charcoal as well, I'll leave the update and recipe for them for another post next time.

This is a puff pastry Totoro soup bowl filled with mushroom soup. I used ready made puff pastry sheets for this so it was quite easy.

Other ingredients used were cheese, olives and fried pasta.

This is another version of the puff pastry soup, did not quite liked how it turned out though. The soup was in the ramekin for this and I covered up the ramekin with a puff pastry on top.

Keroppi Food Art & Cookie

I'm sorry my site was not accessible earlier, thank you to all of you who tried to inform me about it. I was changing the template yesterday, ended up making a mess, I had no time to fix it, so I restricted access to the blog for the time being. This new look that you are seeing is just a temporary one, I'm still working with the designers on another one, as the final site is going to be two column, I thought I should slowly change the blog layout, so that the final transition will be easier.

I'm finally updating a recipe post, I've quite a few to share, but as they take longer to put up, as compared to the regular post, I keep procrastinating. These Keroppi cookies are matcha german cookies. These Keroppi cookies were inspired by Wanwan Tea, I was attracted by the ones she made during my very first visit to her blog.

These cookies simply melts in your mouth, they are similar to the Tsum Tsum ones I shared earlier here. These cookies are green due to the matcha powder added, and they also come with a hint of matcha flavour.

Before I proceed to the cookie recipe, let me share two Keroppi food art I made. This Keroppi was made out of chopped spring onions and fish balls.

The noodles below are udon made using my Philips Noodle Maker, they have a disc for making udon that you can order from their service centre.

And this Keroppi was made from Zucchini-based noodles or Zoodles. I made this one for myself. I used a spiralizer to slice the Zoodles, quite fun, but this gadget is a little bulky for my tiny kitchen. -_-

KEROPPI GERMAN COOKIE RECIPE

Ingredients:
125g butter
50g icing sugar, sifted
125g potato starch
80g cake flour
small chocolate chips
1 tbsp matcha powder
Pink gel colouring

Method:
  1. Beat butter and icing sugar till light and fluffy.

  3. Sift in potato starch and flour, mix till a soft dough is formed.

  5. Divide dough into 3 portions, around 300g, 50g and 20g. Colour 300g of it using matcha powder. Colour 20g of it using pink gel colouring. Leave the 50g plain. Wrap the coloured dough separately with cling wrap and refrigerate for half an hour.

  7. Take the green dough, mould into balls and flatten them a little.

  9. Take the plain dough and roll into two small balls, place on the top of the cookie.

  11. Take pink dough and roll into a small ball, flatten it and place on Keroppi's cheeks.

  13. Place two chocolate chips for Keroppi's eyes.

  15. Bake cookies at 140 degrees celcius for 20 minutes. To prevent cracking, please place at the middle to low rack and insert an empty tray above it. When the cookie has cooled down, use melted chocolate to draw Keroppi's mouth.
