I did not update the blog yesterday because I went to bed instead, lol. I've been feeling rather tired lately as I've been sleeping late every day. I practically have to drag myself out of bed every morning, and I always tell myself I should sleep earlier that night. But when night comes, I end up sleeping late again. I finally turned in early yesterday and sleep at the same time as my boys.
I made this simple salmon fried rice for my boys' lunch last Wednesday. The prawn paste chicken wings were kept from dinner the night before, my boys love eating them . And so do I. I reheated the wings in the oven for them.
I made Mr Potato Head using sausages to decorate their lunch. The details were done using cheese, ham, carrot, nori, edamame and strawberry. Mr Potato Head is a character in the movie Toy Story. I've made a rice version of him before, click HERE to see.
I'm sharing the recipe for our favourite prawn paste wings below. Hope you like it too. :)
PRAWN PASTE CHICKEN RECIPE
Ingredients:
500g chicken wings
2 tbsp Lee Kum Kee fine shrimp sauce
1 tsp sugar
1 tsp ginger juice (grate ginger and squeeze the pulp to get the juice)
1 tsp rice wine
1 tsp sesame oil
1/2 cup corn flour

PRAWN PASTE CHICKEN RECIPE
Ingredients:
500g chicken wings
2 tbsp Lee Kum Kee fine shrimp sauce
1 tsp sugar
1 tsp ginger juice (grate ginger and squeeze the pulp to get the juice)
1 tsp rice wine
1 tsp sesame oil
1/2 cup corn flour
Method:
- Marinade chicken wings with all ingredients except cornflour for at least an hour. You can leave it to marinade overnight as well.
- Just before deep frying, pour in corn flour. Stir in to coat evenly till it is dissolved in the marinade and forms a sticky coat on the chicken.
- Deep fry till golden brown.
- I've not tried other brands of shrimp sauce, so I'm not sure whether they will work with this recipe
